Mushroom Garlic Quinoa

Prepare Quinoa as directed on package - instead of using water, use mushroom broth (or vegetable broth if you can’t find it).

In a nonstick skillet on medium high heat:
2 Tbls. Olive oil
1 package of sliced brown mushrooms
Cook mushrooms until toasty and brown (about 8-10 min). Don’t stir a lot, just let them brown.

Meanwhile, mince 3 cloves garlic
When mushrooms are done, throw in garlic and stir for 1 minute
add mixture to cooked quinoa
salt and pepper to taste
